Since 2021, the Waldhorn in Holzgerlingen has once again been in the hands of the Hiller family, who have owned the historic building for over 100 years. Since December 1st, Maximilian Hiller has been setting the tone in the kitchen. Trained by renowned chefs such as Franz Feckl (\u201cLandhaus Feckl\u201d, Ehningen) and Werner Veit (\u201cKrone\u201d, Bempflingen), his path led him through the \u201cSpeisemeisterei\u201d at Hohenheim Castle in Stuttgart and to restaurants such as the \u201cIndustrial Gourmet Restaurant\u201d and \u201cMoo Moo Steak and Wine\u201d in Krak\u00f3w. Now he has returned home, where \u2014 with the support of his family \u2014 he is leading the newly renovated hotel and restaurant in an exciting new direction. <\/span><\/p>\n

<\/p>\n

The young restaurateur doesn't have a Michelin star yet \u2014 but he certainly has the ambition to earn one. \u201cOur commitment becomes the guest\u2019s enjoyment,\u201d says Maximilian \u201cMaxi\u201d Hiller, who loves open-minded, straightforward cooking. Regional cuisine plays a key role on the menu. Dishes include wild boar from the Sch\u00f6nbuch forest, Maultaschen, and the \"Holzgerlingen's favorite dish,\" alongside vegan \u201ccolorful lentil ragout\u201d and \u201csous vide cod.\u201d And to top it all off, senior and wine collector Eberhard Hiller offers a few true treasures from his wine cellar.<\/span><\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n
